  5. Have everything ready to go beside stove – this cooks FAST

Step 2: Cook the Eggs

  1. Heat pan until REALLY hot (like when water drops dance)
  2. Add bit of oil and quickly scramble eggs (30 seconds max)
  3. Remove eggs before they get brown
  4. Wipe pan clean if needed

Step 3: The Main Event

  1. Get pan smoking hot again
  2. Add oil + butter (butter should sizzle like crazy)
  3. Toss in white parts of green onions, carrots, garlic – stir for 1 min
  4. Add rice and break up any clumps with spatula
  5. DON’T STIR TOO MUCH – let rice get crispy on bottom
  6. After 2-3 mins, drizzle soy sauce mix around edges of pan
  7. Add peas, toss everything together
  8. Add eggs back in
  9. Cook 2 more mins, stirring occasionally

  1. Turn off heat
