Ingredients
  

  • 1.5 lbs chicken breast, cut into 1-inch strips
  • 2 large bell peppers, sliced
  • 1 medium zucchini , sliced into half-moons
  • 1/2 red onion , sliced into wedges
  • 1 cup cherry tomatoes
  • 1/2 cup pitted kalamata olives
  • 3 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 2 cloves garlic , minced
  • 1 tablespoon lemon juice
  • 1/2 cup crumbled feta cheese
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper.
  • In a large bowl, toss the chicken strips, peppers, zucchini, onion, and tomatoes with olive oil, oregano, garlic, lemon juice, salt, and pepper.
  • Spread the mixture in a single layer on the prepared baking sheet.
  • Roast for 15 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  • Remove from oven, add kalamata olives and crumbled feta cheese.
  • Serve immediately.
