Pat steak bites dry with paper towels and season with garlic powder, smoked paprika, salt, and pepper.
Heat 2 tablespoons of olive oil in a large heavy-bottomed skillet over medium-high heat.
Add sweet potato cubes to the skillet and cook for 12 minutes, stirring occasionally until tender and browned.
Add bell peppers to the skillet and sauté with the sweet potatoes for 4 minutes until crisp-tender.
Remove vegetables from the skillet and set aside on a plate.
Add the remaining 1 tablespoon of olive oil to the skillet and increase heat to high.
Add steak bites in a single layer and sear for 4 minutes, turning once to develop a crust on all sides.
Reduce heat to medium and return the vegetables to the skillet.
Add butter and minced garlic, tossing for 1 minute until the butter is melted and fragrant.
Garnish with chopped parsley and serve immediately.
