31-Minute Steak Bites with Sweet Potatoes and Peppers

Ingredients
  

  • 1.5 lbs top sirloin steak, cut into 1-inch cubes
  • 2 large sweet potatoes, peeled and cut into 0.5-inch cubes
  • 2 bell peppers , deseeded and cut into 1-inch pieces
  • 3 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 3 cloves garlic , minced
  • 1 tablespoon fresh parsley, chopped

Instructions
 

  • Pat steak bites dry with paper towels and season with garlic powder, smoked paprika, salt, and pepper.
  • Heat 2 tablespoons of olive oil in a large heavy-bottomed skillet over medium-high heat.
  • Add sweet potato cubes to the skillet and cook for 12 minutes, stirring occasionally until tender and browned.
  • Add bell peppers to the skillet and sauté with the sweet potatoes for 4 minutes until crisp-tender.
  • Remove vegetables from the skillet and set aside on a plate.
  • Add the remaining 1 tablespoon of olive oil to the skillet and increase heat to high.
  • Add steak bites in a single layer and sear for 4 minutes, turning once to develop a crust on all sides.
  • Reduce heat to medium and return the vegetables to the skillet.
  • Add butter and minced garlic, tossing for 1 minute until the butter is melted and fragrant.
  • Garnish with chopped parsley and serve immediately.
