Ingredients
  

Mixed Vegetables

  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, zucchini) Use fresh or frozen mixed vegetables.

Seasonings

  • 1 tablespoon olive oil Extra virgin olive oil is recommended.
  • to taste salt Add according to preference.
  • to taste pepper Add according to preference.
  • optional garlic powder Can add more flavor.
  • optional onion powder Can add more flavor.

Instructions
 

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • In a large bowl, combine mixed vegetables with olive oil, salt, pepper, and optional seasonings.
  • Toss until the vegetables are evenly coated.

Cooking

  • Place the mixture in the air fryer basket in a single layer.
  • Cook for 10-15 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
  • Remove from the air fryer and serve immediately.

Notes

Cut the vegetables into similar-sized pieces for even cooking. Don't overcrowd the air fryer basket—cook in batches if necessary. If desired, sprinkle with grated cheese before serving.
