Ingredients
  

Vegetables

  • 1 whole Zucchini (also known as courgette)
  • 2 whole Bell peppers (red and yellow) Deseeded and chopped
  • 1 small head Broccoli
  • 1 medium Red onion

Seasoning and Oil

  • 1 tsp Smoked paprika
  • 1 tsp Garlic granules
  • 1 tsp Herb de Provence
  • to taste Salt and pepper
  • 1.5 tbsp Olive oil
  • 2 tbsp Lemon juice

Instructions
 

Preparation

  • Wash the vegetables, deseed the bell peppers, and chop the rest of the veggies into equal sizes.
  • Transfer the chopped vegetables to a large mixing bowl.
  • Sprinkle smoked paprika, garlic granules, Herb de Provence, salt, pepper, olive oil, and lemon juice over the vegetables.
  • Mix well to combine. Marinating for 15 to 30 minutes is optional.

Cooking

  • Preheat the air fryer at 200C/400F for 3 minutes.
  • Transfer the marinated vegetables to the air fryer basket and spread them out.
  • Cook for 10 to 15 minutes, shaking the basket every 4 to 5 minutes until they are tender, crunchy, and perfectly roasted.

Serving

  • Serve the roasted vegetables as a side dish for grilled chicken, fish, or steaks.
  • You can also add them to salads or grain bowls.

Notes

Cut vegetables into similar sizes for even cooking. Don't overcrowd the air fryer basket; this helps them roast better. You can skip the marinating step if you're short on time. Experiment with different spices for variations.
