Ingredients
  

For the chicken

  • 1 lb chicken breasts or thighs Cut into bite-sized pieces

For the marinade

  • 1/4 cup soy sauce Can substitute with tamari for gluten-free
  • 1/4 cup brown sugar
  • 1 tbsp ginger (grated)
  • 2 cloves garlic (minced)
  • 1 tbsp cornstarch For thicker glaze, add more
  • 2 tbsp water
  • 1 tbsp sesame oil

For garnish

  • green onions (chopped)
  • sesame seeds

Preparation

  • Cut the chicken into bite-sized pieces and set aside.
  • In a bowl, mix together soy sauce, brown sugar, grated ginger, minced garlic, cornstarch, water, and sesame oil to create the teriyaki marinade.
  • Add the chicken pieces to the marinade and let it sit for at least 30 minutes.

Cooking

  • Preheat the air fryer to 400°F (200°C).
  • Place the marinated chicken in the air fryer basket in a single layer.
  • Air fry for about 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and has a nice glaze.
  • Serve over rice or veggies and garnish with chopped green onions and sesame seeds.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can also freeze for up to 3 months.
