Preparation

  • Preheat the air fryer to 400°F (200°C).
  • In a bowl, toss the mixed vegetables with olive oil, garlic powder, salt, pepper, and optional herbs.
  • Place the seasoned vegetables in the air fryer basket in a single layer.

Cooking

  • Cook for 10-15 minutes, shaking the basket halfway through, until vegetables are tender and slightly crispy.

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, air fry at 350°F for about 5 minutes for best results.
