Ingredients
  

Vegetables

  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 each red bell pepper, sliced
  • 1 each yellow bell pepper, sliced
  • 1 each zucchini, sliced

Seasoning

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs (such as basil, oregano, and thyme)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions
 

Preparation

  • Wash and dry all the vegetables thoroughly.
  • Cut the broccoli into bite-sized florets, halve the cherry tomatoes, slice the red and yellow bell peppers, and slice the zucchini.

Mixing

  • In a large mixing bowl, combine the olive oil, garlic powder, onion powder, dried Italian herbs, salt, and black pepper. Stir well to mix the seasonings.
  • Add all the prepared vegetables to the bowl and toss them in the seasoned olive oil until they are evenly coated.

Cooking

  • Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  • Arrange the vegetables in the air fryer basket in a single layer. If necessary, cook in batches to avoid overcrowding.
  • Air fry the vegetables for 10–12 minutes, shaking the basket halfway through cooking.
  • Check for doneness; the vegetables should be tender and slightly charred at the edges.
  • Once cooked, remove the vegetables from the air fryer and transfer them to a serving platter.
  • Optional: sprinkle grated Parmesan cheese over the hot vegetables.

Serving

  • Serve immediately as a side dish or on top of grains for a complete meal.

Tips: Cut vegetables evenly for even cooking, avoid overcrowding the air fryer, and adjust seasonings according to your taste. Serve with dips like hummus or ranch for extra flavor.
