Ingredients
  

Vegetable Mixture

  • 2 cups mixed vegetables, grated or finely chopped Use zucchini, carrots, potatoes, sweet potatoes, bell peppers, corn, peas, spinach, broccoli florets, and onions.
  • 2 tablespoons fresh herbs, chopped Choose from parsley, cilantro, chives, dill, or other favorites.
  • 2 cloves garlic, minced Freshly minced is best, but garlic powder can be used as a substitute.
  • 1 large egg Use a flax egg for a vegan option.
  • 1/4 cup onion, finely chopped White or yellow onions work well.
  • 1 teaspoon spices Use a mix of cumin, paprika, turmeric, chili powder, or Italian seasoning.
  • to taste salt and black pepper Season generously.

Binding Ingredients

  • 1/2 cup all-purpose flour Use gluten-free alternatives for a gluten-free version.
  • 1/2 cup breadcrumbs Panko works well for extra crispiness.
  • 1 tablespoon olive oil or cooking spray To prevent sticking and promote crisping.

Instructions
 

Preparation

  • Thoroughly wash and prepare your chosen vegetables. Grate or finely chop as needed.
  • Remove excess moisture from grated vegetables by squeezing them in a clean kitchen towel.
  • In a large mixing bowl, combine the squeezed vegetables, onion, garlic, fresh herbs, spices, flour, breadcrumbs, and egg. Mix until well combined.
  • Shape the mixture into small patties, about ½ to ¾ inch thick.
  • Preheat the air fryer to 375°F (190°C).

Cooking

  • Lightly brush or spray the air fryer basket with olive oil or cooking spray.
  • Place the fritters in a single layer in the basket, avoiding overcrowding.
  • Air fry for 12-15 minutes, flipping halfway through, until golden brown and cooked through.

Serving

  • Carefully remove the fritters from the air fryer and serve immediately.

Notes

Serve with a variety of dips like yogurt sauce or salsa. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the air fryer for best results.
