Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 slices cooked and crumbled bacon
  • 1 cup sautéed mushrooms
  • 1 cup shredded Colby Jack cheese

For the Honey Mustard Sauce:

  • 1/2 cup prepared mustard
  • 1/4 cup honey
  • 1/4 cup light corn syrup
  • 1/4 cup mayonnaise

Instructions
 

Marinate the Chicken:

  • In a bowl, mix prepared mustard, honey, light corn syrup, and mayonnaise. Add the chicken breasts, coating them well. Marinate for at least 30 minutes or up to 24 hours in the refrigerator.

Prepare the Toppings:

  • Sauté sliced mushrooms in a skillet over medium-high heat until tender and golden. Set aside.
  • Cook bacon until crispy and crumble it. Set aside.

Cook the Chicken:

  • Preheat the oven to 400°F (200°C).
  • In a skillet, sear the marinated chicken breasts over medium-high heat until golden brown on both sides (about 5-7 minutes each side).
  • Transfer the seared chicken to a baking dish.

Assemble the Dish:

  • Top each chicken breast with sautéed mushrooms, crumbled bacon, and shredded Colby Jack cheese.

Bake:

  • Bake in the preheated oven for about 25 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted and bubbly.

Serve:

  • Let it rest for a few minutes before serving. Enjoy with your favorite side dishes!
