Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Toppings

  • as needed sliced almonds for topping
  • as needed powdered sugar for dusting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the softened butter and sugar until light and fluffy.
  • Add in the egg, vanilla extract, and almond extract, mixing well.
  • In another bowl, combine the almond flour, all-purpose flour, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Baking

  • Scoop tablespoons of the dough onto a lined baking sheet, making sure to space them apart.
  • Top each cookie with sliced almonds.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  • Let cool for a few minutes before dusting with powdered sugar and serving.

Notes

Store your almond cookies in an airtight container at room temperature for up to a week. To keep them longer, freeze them after conditioning completely.
