  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup strawberry jam
  • as needed powdered sugar for dusting

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the butter and powdered sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract, mixing well.
  • Gradually add in the almond flour and all-purpose flour until a dough forms.
  • Roll out the dough on a floured surface to about 1/8 inch thick.
  • Cut into desired shapes and place half of them on a baking sheet.
  • Spoon a small amount of strawberry jam onto the center of each cookie.
  • Place another cookie on top and gently press down to seal.
  • Bake for 10-12 minutes until lightly golden.
  • Let cool before dusting with powdered sugar.

Notes

Chill the dough if too soft before rolling. Switch up the jam for different flavors. Store in an airtight container at room temperature for up to a week.
