Ingredients
  

  • 2 cups 250g all-purpose flour
  • ½ cup 113g unsalted butter, softened
  • ¾ cup 150g light brown sugar, packed
  • ¼ cup 50g granulated sugar (for coating)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 teaspoons apple pie spice
  • ½ teaspoon kosher salt
  • 2 tablespoons reduced apple cider from 2 cups fresh apple cider reduced to ½ cup
  • Optional: ¼ teaspoon ground nutmeg and ¼ teaspoon ground allspice for added spice

Instructions
 

  • Prepare Reduced Apple Cider: In a small saucepan, simmer 2 cups of fresh apple cider until reduced to ½ cup. This concentrates the flavor. Let cool.
  • Cream Butter & Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add Wet Ingredients: Mix in the egg, vanilla extract, and 2 tablespoons of reduced apple cider.
  • Mix Dry Ingredients: In another bowl, whisk together flour, baking soda, apple pie spice, salt, and optional nutmeg and allspice.
  • Combine: Gradually add dry ingredients to wet ingredients. Mix until just combined.
  • Chill Dough: Cover dough and chill for at least 30 minutes (up to 4 hours for deeper flavor).
  • Preheat Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Form Cookies: Roll dough into 1-inch balls. Roll each ball in granulated sugar for coating. Place on baking sheet 2 inches apart.
  • Bake: Bake for 9-11 minutes, until edges are set and centers are soft.
  • Cool: Let cookies cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
  • Optional Glaze: Drizzle with apple cider glaze (mix 1 cup powdered sugar with 3-4 teaspoons apple cider until smooth).

Notes

For richer flavor, use boiled cider instead of just reduced cider. Boiled cider is thicker and more concentrated.
Adding chopped fresh apples, caramel bits, or pecans can enhance texture and flavor.
Store cookies in an airtight container at room temperature for 2 days, refrigerate for 4 days, or freeze for up to 1 month.
For softer cookies, chill the dough longer and remove cookies from the oven when the centers still look slightly underbaked.
