Apple Cinnamon Breakfast Quesadillas

Ingredients
  

  • 2 large flour tortillas
  • 1 large Granny Smith apple, thinly sliced
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon hone y
  • 1/4 teaspoon vanilla extract

Instructions
 

  • In a small bowl, combine the softened cream cheese, honey, and vanilla extract until smooth.
  • In a skillet over medium heat, melt the butter. Add the sliced apples and sprinkle with cinnamon.
  • Sauté the apples for 5 minutes or until they are tender and slightly caramelized. Remove the apples from the skillet and set aside.
  • Wipe the skillet clean. Spread the cream cheese mixture onto one side of each tortilla.
  • Place a tortilla in the skillet over medium-low heat. Arrange half of the sautéed apples over one half of the tortilla.
  • Fold the tortilla in half to cover the apples. Cook for 2 minutes per side until the exterior is golden brown and crisp.
  • Repeat the process for the second tortilla. Slice into wedges and serve immediately.
