Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup Greek yogurt
  • 1/2 cup sugar Can substitute with honey or maple syrup.
  • 1/2 cup apple sauce
  • 1 large egg

Fruit

  • 1 cup diced apples Make sure they are diced small for even distribution.

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk Greek yogurt, sugar, apple sauce, and egg.
  • Combine wet and dry ingredients.
  • Fold in diced apples.
  • Pour batter into muffin tins.

Baking

  • Bake for 20-25 minutes until golden.
  • Cool before serving.

Notes

These muffins are best served warm, fresh out of the oven. Store them in an airtight container in the fridge for up to a week, or freeze them for longer storage. Reheat them in the microwave or toaster oven.
