Ingredients
  

For the Filling

  • 2 cups apples, peeled and diced Use any variety of apple.
  • 1/4 cup brown sugar Adjust to taste.
  • 1 teaspoon cinnamon Adds warm flavor.
  • 1 tablespoon lemon juice Prevents browning of apples.

For the Taquitos

  • 6 small flour tortillas Can substitute with gluten-free tortillas.
  • 1/4 cup granola Optional for added crunch.
  • cooking spray For air fryer.
  • powdered sugar for dusting For serving.

Instructions
 

Preparation

  • In a bowl, combine diced apples, brown sugar, cinnamon, and lemon juice. Mix well.
  • Place a spoonful of the apple mixture onto each tortilla. If desired, sprinkle with granola.
  • Roll the tortillas tightly around the filling.

Cooking

  • Spray the air fryer basket with cooking spray. Place the taquitos seam side down in the basket.
  • Spray the tops of the taquitos with cooking spray.
  • Air fry at 400°F (200°C) for 8-10 minutes, or until golden brown and crispy.
  • Remove from the air fryer and dust with powdered sugar before serving.

Notes

Best enjoyed warm. Can serve with vanilla ice cream or whipped cream.
