- 4 cups chicken stock for the broth base
- 4 green onions sliced (adds freshness)
- 2 tbsp oyster sauce for umami flavor
- 2 tbsp soy sauce for depth of flavor
- 8 oz Chinese noodles main ingredient
- 2 cups bok choy chopped (for a crisp texture)
- 2 tbsp coconut aminos optional
- 2 garlic cloves minced
- 1 tbsp ginger grated
- 1/4 cup cilantro chopped
- 1/4 white onion diced
- 1 carrot julienned
- Juice of 1 lime
- 1 tsp sesame oil
- 1 tbsp rice vinegar
Heat the chicken stock in a large pot over medium heat.
Once boiling, lower heat to simmer. Add sliced green onions, soy sauce, oyster sauce, garlic, ginger, and rice vinegar.
Cook noodles according to package instructions and set aside.
In a separate pan, cook the chicken (if using) for about 3 minutes on each side. Add chicken to the soup and let simmer for 2 minutes to absorb the flavors.
Add bok choy, carrots, and noodles to the pot. Simmer for another 2 minutes.
Add coconut aminos, lime juice, and cilantro. Stir well.
Serve hot and enjoy!
