Ingredients
  

For the Scallops:

  • 1 lb fresh dry sea scallops
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

For the Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp Chinese black vinegar
  • 1 tbsp LAOGANMA spicy chili crisp
  • 2 tbsp Japanese Kewpie mayo
  • 1 tsp togarashi Japanese chili pepper blend
  • 1 tsp grated ginger

Optional Sides:

  • Steamed jasmine rice
  • Japanese spinach salad
  • Baby bok choy stir-fry

Instructions
 

Prep the Scallops:

  • Pat dry the scallops with paper towels to remove excess moisture. Season with salt and pepper.

Heat the Pan:

  • In a large skillet, heat vegetable oil over high heat until shimmering.

Sear the Scallops:

  • Place scallops in the pan without overcrowding. Sear for 2-3 minutes on each side until golden-brown. Remove and set aside.

Prepare the Sauce:

  • In the same pan, add soy sauce, oyster sauce, black vinegar, chili crisp, and grated ginger. Cook for 1-2 minutes until heated through.

Combine and Serve:

  • Return scallops to the pan, toss gently in the sauce. Serve hot with steamed rice and your choice of sides.
