  • 1 whole ripe avocado Use ripe avocados for creaminess.
  • 1 whole lemon (juiced) Fresh lemon juice prevents browning.
  • 2 whole eggs Poach to desired doneness.

Instructions
 

Preparation

  • Toast the whole grain bread until crispy.
  • While the bread is toasting, bring a pot of water to a simmer and poach the eggs to your desired doneness.
  • In a bowl, mash the avocado and mix in the lemon juice, salt, and pepper.

Assembly

  • Spread the mashed avocado evenly onto the toasted bread.
  • Remove the poached eggs from the water and place one on each slice of avocado toast.
  • Top with optional red pepper flakes, herbs, or feta cheese if desired.

Notes

Best served fresh. Store leftover mashed avocado separately to prevent browning and keep toasted bread crisp.
