  • 24 pieces chocolate-covered butter cookies Crushed into fine crumbs
  • 8 ounces mascarpone Use full-fat for creamier texture
  • 1/2 cup Baileys Irish Cream Alcohol can be substituted
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate for coating Melt before dipping

Preparation

  • Crush the chocolate-covered butter cookies in a food processor until fine crumbs form.
  • In a mixing bowl, combine the crushed cookies, mascarpone, Baileys, powdered sugar, and vanilla extract. Mix until fully incorporated.
  • Scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
  • Melt the chocolate in a microwave or double boiler until smooth.
  • Dip each cheesecake ball into the melted chocolate to coat, then place them on a baking sheet lined with parchment paper.
  • Chill in the refrigerator for about 30 minutes to set the chocolate.
