chickpeas, drained and rinsed

cups cherry
tomatoes

block (7 oz)
Greek feta cheese

virgin olive oil

cloves garlic

oregano

pepper flakes

parsley, chopped
Instructions
Preheat oven to 400°F (200°C).
In a large baking dish, combine chickpeas, cherry tomatoes, minced garlic, oregano, red pepper flakes, salt, and pepper.
Add olive oil and toss until all ingredients are thoroughly coated.
Place the block of feta cheese in the center of the baking dish, pushing the chickpea mixture to the sides.
Bake for 30 minutes until the tomatoes have burst and the feta is softened and slightly browned.
Remove from the oven and use a spoon or fork to break up the feta cheese, stirring it into the chickpeas and tomatoes to create a creamy sauce.
Garnish with fresh parsley and serve immediately.
