Baked Feta Chickpeas

Ingredients
  

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 cups cherry tomatoes
  • 1 block (7 oz) Greek feta cheese
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large baking dish, combine chickpeas, cherry tomatoes, minced garlic, oregano, red pepper flakes, salt, and pepper.
  • Add olive oil and toss until all ingredients are thoroughly coated.
  • Place the block of feta cheese in the center of the baking dish, pushing the chickpea mixture to the sides.
  • Bake for 30 minutes until the tomatoes have burst and the feta is softened and slightly browned.
  • Remove from the oven and use a spoon or fork to break up the feta cheese, stirring it into the chickpeas and tomatoes to create a creamy sauce.
  • Garnish with fresh parsley and serve immediately.
