  • 1 pound cooked pasta Use your favorite type of pasta.
  • 8 oz cooked salmon Pre-cooked and flaked.
  • 1 block feta cheese For the sauce.
  • 10 oz cherry tomatoes Halved if preferred.
  • 3 cloves garlic Minced.
  • to taste olive oil For drizzling.
  • to taste seasoning Salt, pepper, or herbs of choice.

Preparation

  • Preheat the oven to 400°F (200°C). Place the block of feta cheese in a baking dish.
  • Add the cherry tomatoes and minced garlic. Drizzle with olive oil and sprinkle with seasoning.
  • Bake for about 20-25 minutes until the cheese is soft and the tomatoes are juicy.
  • In the meantime, cook the pasta according to package instructions. Drain and set aside.
  • Once the feta is done, mash it slightly with a fork, mixing it with the tomatoes and garlic to create a sauce.
  • Gently fold in the cooked pasta and salmon, ensuring it’s all nicely combined.

Notes

Serve this dish as is or with a green salad or garlic bread. For added flavor, sprinkle fresh herbs on top. Store leftovers in an airtight container for up to 3 days.
