  • 2 lbs baby or Yukon gold potatoes, halved or quartered Use small potatoes for quicker cooking.
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 cloves garlic, minced Don't skip the garlic—it adds wonderful flavor.
  • 8 oz block of feta cheese Ensure feta is firm; soft cheese won’t work well.
  • ½ tsp dried oregano or Italian seasoning
  • to taste Chopped fresh parsley For garnish.
  • to serve Lemon wedges
  • to taste Crushed red pepper flakes For a spicy touch.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the halved potatoes with olive oil, salt, black pepper, and minced garlic until well coated.

Baking

  • Spread the potatoes in a baking dish. Place the feta cheese block in the center, then sprinkle with oregano or Italian seasoning.
  • Bake for about 30-35 minutes, or until the potatoes are fork-tender and golden.
  • Finish with fresh parsley, lemon wedges, and crushed red pepper flakes for a flavorful touch before serving.

Notes

These baked feta potatoes can be a perfect side dish for grilled meats or roasted vegetables. Serve immediately for the best texture, but they can still be enjoyed reheated. They can be prepped ahead of time and stored in the fridge.
