  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (or gluten-free breadcrumbs)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs (optional) Can be replaced with fresh herbs for more flavor.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Slice the zucchinis into 1/4-inch thick rounds.
  • In a bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, pepper, and Italian herbs.
  • Dip each zucchini slice into the olive oil, then coat with the cheese mixture.
  • Place them in a single layer on a baking sheet lined with parchment paper.

Baking

  • Bake for 15-20 minutes or until golden and crispy, flipping halfway through.

Serving

  • Serve warm as a snack or side dish.

Notes

To keep leftovers fresh, store in an airtight container in the fridge for up to three days. For freezing, place baked slices in a single layer until solid, then transfer to a freezer-safe bag. Reheat in the oven until warm and crispy.
