This Balsamic Fig Glazed Chicken is a quick and impressive weeknight dinner. Juicy chicken is coated in a sweet and tangy glaze made with balsamic vinegar, fig jam, honey, and herbs. Elegant enough for company, but easy enough for every night.

Ingredients
  

  • 4 boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 0.5 cup balsamic vinegar
  • 0.25 cup fig jam or fig preserves
  • 1 tbsp honey (or maple syrup)
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme or rosemary
  • salt and black pepper, to taste

Instructions
 

  • Pat chicken dry and season generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high. Sear chicken 5–7 minutes per side until golden and cooked through. Remove and set aside.
  • In same pan, sauté garlic 30 seconds. Add balsamic vinegar, fig jam, and honey. Simmer 2–3 minutes until slightly thickened.
  • Return chicken to pan, turning to coat in glaze. Cook 1 minute, garnish with herbs, and serve immediately.

Notes

Use chicken thighs for extra juiciness, though breasts work too. Make the glaze ahead—it keeps 5 days in the fridge. If the glaze won’t thicken, simmer longer or whisk in a cornstarch slurry. Variations include adding red pepper flakes, fresh figs, or a splash of wine for richness.
