Banana Blondies

These banana blondies are the perfect way to use up overripe bananas! Moist, chewy, and lightly sweet with a hint of butterscotch flavor, they are easy to make and completely irresistible. Customize them with your favorite mix-ins like white chocolate chips, nuts, or butterscotch chips. A quick and delicious banana dessert!

Ingredients
  

For the Base:

  • 2 very ripe bananas about 3/4 cup mashed
  • 1/2 cup unsalted butter melted
  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon optional

Mix-ins (choose 1-2):

  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup butterscotch chips

For Dairy-Free Version:

  • Substitute coconut oil or vegan butter for regular butter
  • Use dairy-free white chocolate chips

For Gluten-Free Version:

  • Use 1:1 gluten-free flour blend
  • Add 1/4 tsp xanthan gum if your blend doesn’t include it

Instructions
 

Preheat & Prep:

  • Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.

Mash Bananas:

  • In a large bowl, mash the bananas until mostly smooth.

Mix Wet Ingredients:

  • Stir in melted butter and brown sugar. Let cool slightly, then add egg and vanilla. Mix well.

Add Dry Ingredients:

  • In a separate bowl, whisk together flour, baking powder, salt, and cinnamon (if using). Stir into wet mixture until just combined. Do not overmix.

Fold in Mix-ins:

  • Gently stir in your choice of mix-ins.
  • Bake: Pour batter into prepared pan, spread evenly, and bake for 22-25 minutes until edges are golden and center looks slightly underdone.

Cool & Cut:

  • Let cool in the pan for at least 30 minutes before lifting out and cutting into squares.

Notes

Let blondies cool completely before cutting to get clean slices.
Store in an airtight container at room temperature for 3 days, refrigerate for up to a week, or freeze for up to 3 months.
For a more cake-like texture, add an extra egg.
For a gooier center, bake for the shorter time.
