  • 2 medium medium-sized ripe bananas The riper, the better!
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional) Can substitute with dried fruits or nuts.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Mix in the granulated sugar, brown sugar, and melted butter until well combined.
  • Beat in the eggs and vanilla extract until everything is well incorporated.
  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  • Gradually fold the dry ingredients into the banana mixture using a rubber spatula until just combined.
  • If using, gently fold in the chocolate chips.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for 25 minutes or until a toothpick inserted into the center comes out mostly clean.
  • Let the brownies cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

Notes

These brownies can be served warm with vanilla ice cream or whipped cream. They can also be stored in an airtight container at room temperature for up to three days or frozen for up to three months.
