Main Ingredients

  • 2 pieces overripe bananas Use when very soft for best sweetness
  • 1 cup brown sugar Can substitute with white sugar mixed with molasses
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 piece egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour Can substitute half with almond flour for gluten-free
  • 1/2 cup chocolate chips Can use dark, milk, or white chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a large bowl, mash the overripe bananas.
  • Mix in the melted butter, brown sugar, and vanilla extract until combined.
  • Add in the egg and mix well.
  • In another bowl, whisk together the baking powder, baking soda, salt, and flour.
  • Gradually add the dry ingredients to the banana mixture and fold until just combined.
  • Stir in the chocolate chips.

Baking

  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Serving

  • Let cool, cut into squares, and enjoy!

Notes

Serve warm with a scoop of vanilla ice cream or alongside fresh fruit. Store in an airtight container for up to three days. Freeze cut squares for up to two months.
