Banana Cottage Cheese Pancakes

Ingredients
  

  • 1 cup low -fat cottage cheese
  • 2 large ripe bananas, peeled
  • 2 large egg s
  • 1/2 cup rolled oats or oat flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/8 teaspoon kosher salt
  • 1 tablespoon unsalted butter for the pan

Instructions
 

  • Place the cottage cheese, bananas, eggs, oats, vanilla extract, cinnamon, baking powder, and salt into a high-speed blender or food processor.
  • Process the mixture on high until the batter is completely smooth and homogeneous.
  • Preheat a non-stick skillet or griddle over medium-low heat and grease lightly with a portion of the butter.
  • Dispense approximately 1/4 cup of batter per pancake onto the heated surface, leaving space between each.
  • Cook for 3 to 4 minutes or until the bottom is golden and small bubbles appear on the surface.
  • Carefully flip each pancake using a thin spatula and cook for an additional 2 to 3 minutes until the center is set.
  • Transfer to a warm plate and repeat the process with the remaining batter and butter.
