Instructions
Place the cottage cheese, bananas, eggs, oats, vanilla extract, cinnamon, baking powder, and salt into a high-speed blender or food processor.
Process the mixture on high until the batter is completely smooth and homogeneous.
Preheat a non-stick skillet or griddle over medium-low heat and grease lightly with a portion of the butter.
Dispense approximately 1/4 cup of batter per pancake onto the heated surface, leaving space between each.
Cook for 3 to 4 minutes or until the bottom is golden and small bubbles appear on the surface.
Carefully flip each pancake using a thin spatula and cook for an additional 2 to 3 minutes until the center is set.
Transfer to a warm plate and repeat the process with the remaining batter and butter.
