  • 1/4 cup 1/4 cup nut butter Optional; can use almond or coconut butter for dairy-free.
  • 1/4 cup 1/4 cup nuts or chocolate chips Optional; for a sweeter treat, add semi-sweet or dark chocolate chips.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a bowl, mash the ripe bananas until smooth.
  • Stir in the oats and cinnamon until well combined.
  • If desired, mix in honey or maple syrup and nut butter.
  • Fold in any optional ingredients like nuts or chocolate chips.

Baking

  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 20-25 minutes or until golden brown.
  • Allow to cool before slicing into bars.

Notes

Store bars in an airtight container in the fridge for up to a week. For longer storage, freeze wrapped bars for up to three months. To reheat, microwave for 15-20 seconds or warm in the oven.
