- 2 ripe bananas mashed
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1/2 teaspoon ground cinnamon optional
- 2 eggs
- 1/2 cup milk
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
In a large bowl, mash the bananas until smooth.
Add flour, baking powder, salt, sugar, and cinnamon. Mix well.
In another bowl, whisk together eggs, milk, melted butter, and vanilla extract.
Gradually pour the wet ingredients into the dry ingredients and mix until just combined.
Let the batter rest for 5 minutes.
Heat a non-stick skillet over medium-low heat and lightly grease it.
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2 minutes.
Remove from heat and serve warm with your favorite toppings.
For extra fluffiness, let the batter rest for 10 minutes.
