Equipment

  • Large mixing bowl
  • Whisk
  • Skillet
  • Spatula
  • Baking sheet (for freezing)

Ingredients

Buttermilk Pancake Ingredients

  • 1 ½ cups all-purpose flour or gluten-free alternative
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¼ cups buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup

Bananas Foster Sauce Ingredients

  • 2 ripe firm bananas, sliced
  • ¼ cup dark rum
  • cup brown sugar
  • 2 tablespoons butter
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon

Instructions

Prepare the Pancake Batter

  • In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, egg, melted butter, and maple syrup.
  • Gradually fold the wet ingredients into the dry ingredients. Do not overmix; the batter should be slightly lumpy.

Make the Bananas Foster Sauce

  • Heat butter in a skillet over medium heat. Add brown sugar, maple syrup, and cinnamon, stirring until the sugar dissolves.
  • Stir in the dark rum and add banana slices. Cook for about 5 minutes until the bananas are caramelized and tender.

Cook the Pancakes

  • Heat a skillet or griddle over medium heat and lightly grease it with butter or oil.
  • Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.

Assemble and Serve

  • Stack the pancakes on a plate and generously drizzle the Bananas Foster sauce over the top.
  • Optionally, garnish with chopped pecans, whipped cream, or extra maple syrup.

Notes

  • For a kid-friendly version, replace dark rum with rum extract or omit it entirely.
  • Leftover pancakes can be frozen and reheated in a toaster or oven.
  • Experiment with other toppings like strawberries or chocolate chips for a creative twist.
