For the Chicken:
- 1½ lbs boneless skinless chicken breasts (or thighs)
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- Wooden skewers soaked, if using
For the Bang Bang Sauce:
- ½ cup mayonnaise
- ¼ cup Thai sweet chili sauce
- 1 –2 tbsp sriracha to taste
- 1 tbsp honey optional
- 1 tsp rice vinegar

Marinate the Chicken:
Cut chicken into 1.5-inch pieces. Toss with olive oil, garlic powder, paprika, salt, and pepper. Marinate for at least 30 minutes.
Make the Sauce:
In a bowl, whisk together mayo, sweet chili sauce, sriracha, honey (if using), and rice vinegar. Set aside or refrigerate.
Cook the Skewers:
Grill Method: Preheat grill to medium-high. Grill skewers 5–6 minutes per side or until cooked through (internal temp 165°F).
Oven Method: Bake at 425°F for 18–20 minutes, or until cooked through. Broil 2–3 minutes at the end for browning.
Marinate longer for deeper flavor (overnight works wonders).
