  • 3 tablespoons bang bang sauce Adjust based on spice preference.
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil For frying.

Cooking Instructions

  • Heat vegetable oil in a large pan over medium heat.
  • Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  • Push the veggies to the side and pour in the beaten eggs, scrambling until cooked.
  • Add the diced chicken and cooked rice to the pan.
  • Pour in the bang bang sauce and soy sauce, mixing everything well.
  • Stir-fry for another 2-3 minutes until heated through.
  • Garnish with chopped green onions and serve hot.

Notes

This dish can be served as a main course or paired with a light salad or spring rolls. For extra flavor, consider adding sesame seeds or more bang bang sauce on top. Store leftovers in an airtight container for 3-4 days, or freeze for later use.
