Ingredients
  

  • 1 lb beef tenderloin, cut into bite-sized cubes
  • 1 sheet puff pastry, thawed
  • 8 oz mushrooms (cremini or button), finely chopped
  • 4 slices prosciutto
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons butter
  • 2 tablespoons white wine
  • 1 egg, beaten (for egg wash)
  • to taste salt and black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Cut beef into cubes, season with salt and pepper, then sear in butter for 1–2 minutes per side. Remove and let cool.
  • In a skillet, melt butter and cook mushrooms with salt and pepper for 5–7 minutes until soft. Add garlic and thyme; cook 1 minute. Deglaze with white wine and cook until liquid evaporates. Let cool.
  • Cut puff pastry into squares. Spread mushroom duxelles, add a cube of beef and a strip of prosciutto. Fold pastry over and seal with egg wash. Bake 20–25 minutes until golden brown. Cool slightly before serving.

Notes

Best served warm right out of the oven. You can prep ahead by assembling the bites, refrigerating up to 24 hours, and baking just before serving. For extra flavor, brush the tops with egg wash and sprinkle with flaky sea salt.
