  • 1 package (8 oz) cream cheese, softened Allow to soften for easier mixing.
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container (8 oz) whipped topping (e.g., Cool Whip), thawed
  • 2 cups mixed berries (strawberries, blueberries, and raspberries, fresh or frozen) Fresh berries are ideal, but frozen works too.
  • 1 cup mini marshmallows
  • ½ cup shredded sweetened coconut Optional, for a snowy touch.

Preparation

  • In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Gently fold in the whipped topping until light and fluffy.
  • Fold in the berries, mini marshmallows, and shredded coconut (if using). Be careful not to crush the berries while mixing.
  • Cover the bowl and refrigerate for at least 1-2 hours, or until well-chilled and the flavors have melded together.
  • Transfer the fluff to a festive serving bowl. Garnish with fresh mint leaves, additional berries, and a light dusting of powdered sugar for a snowy effect.

Notes

Store any leftovers in an airtight container in the fridge for up to three days. This dish doesn’t freeze well due to the cream cheese and whipped topping.
