Ingredients
  

Pasta and Beef

  • 8 oz pasta (elbow or rotini)
  • 1 lb ground beef Can substitute with ground turkey or chicken.

Vegetables and Cheese

  • 1 cup shredded lettuce
  • 1/2 cup diced pickles
  • 1/2 cup shredded cheddar cheese Can replace with mozzarella or pepper jack.
  • 1/2 cup diced tomatoes

Dressing and Seasoning

  • 1/2 cup Thousand Island dressing Substitute with ranch or creamy dressing if preferred.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the pasta according to package instructions, then drain and let cool.
  • In a skillet, cook the ground beef until browned. Drain excess fat.
  • In a large bowl, combine the cooled pasta, cooked ground beef, lettuce, pickles, cheese, and tomatoes.
  • Add the Thousand Island dressing and stir until well combined.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Not suitable for freezing due to texture changes.
