Ingredients
  

For the Chicken:

  • 2 boneless chicken breasts thinly sliced
  • 1 cup buttermilk or regular milk
  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

For the Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp honey or maple syrup
  • 1 tbsp hot sauce adjust to taste
  • 1 tsp apple cider vinegar or lemon juice

For Assembly:

  • 4 hot dog buns
  • 2 cups shredded cheddar or Monterey Jack/Pepper Jack
  • 1/4 cup dill pickles
  • 2 green onions thinly sliced

Instructions
 

Step 1: Prep the Chicken

  • Slice chicken into 1/2 inch strips.
  • Soak in buttermilk for at least 30 minutes or overnight.
  • Mix flour, paprika, garlic powder, salt, and pepper in a shallow dish.
  • Dredge chicken in seasoned flour, pressing to coat well.

Step 2: Fry the Chicken

  • Heat oil in skillet to 350°F.
  • Fry chicken 3-4 minutes per side until golden brown and cooked through.
  • Drain on paper towels.

Step 3: Make the Sauce

  • Mix all sauce ingredients in a bowl until smooth.
  • Taste and adjust seasoning if needed.

Step 4: Assemble Sandwich

  • Preheat oven to 350°F.
  • Lightly toast buns for 2-3 minutes.
  • Spread sauce inside buns.
  • Add chicken strips, top with cheese.
  • Bake sandwiches 3-5 minutes until cheese melts.
  • Top with pickles and green onions.

Notes

Make ahead: Fry chicken in advance and reheat in oven before assembling.
Try chicken thighs for juicier meat.
For a lighter version: bake chicken at 425°F for 15-18 mins with oil spray.
Swap cheddar for pepper jack for spicy kick.
