For the Blondies

  • 1 cup unsalted butter
  • 1 cup Biscoff cookie butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed Biscoff cookies

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch square baking pan or line it with parchment paper.
  • In a medium-sized saucepan, melt the unsalted butter and Biscoff cookie butter together over low heat, stirring occasionally until smooth.
  • Remove from heat and let cool slightly for about 5 minutes.
  • Add the brown sugar to the butter mixture and whisk until smooth.
  • Whisk in the eggs until fully incorporated.
  • Stir in the vanilla extract.
  • In a separate bowl, sift together the flour, baking powder, and salt.
  • Gently fold the dry ingredients into the wet mixture, being careful not to overmix.
  • Fold in the white chocolate chips and crushed Biscoff cookies.
  • Pour the batter into the prepared baking pan, spreading it evenly.

Baking

  • Bake for 25 to 30 minutes, checking with a toothpick to ensure it comes out clean.
  • Allow to cool in the pan for about 10 minutes, then remove and let cool completely on a wire rack.
  • Once cooled, cut into squares and serve.

Notes

For a chewier texture, substitute half the granulated sugar with brown sugar. Consider adding a pinch of cinnamon for extra flavor.
