Ingredients
  

For the Biscuits:

  • 2 1/3 cups Original Bisquick mix
  • 1/2 cup milk
  • 3 tablespoons sugar
  • 3 tablespoons melted butter or margarine

For the Strawberry Filling:

  • 1 quart fresh strawberries sliced
  • 1/4 cup sugar

For the Whipped Cream:

  • 1/2 cup whipping cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered sugar

Instructions
 

Prepare the Strawberry Mixture:

  • Slice 1 pound of fresh strawberries and toss them with 3 tablespoons of granulated sugar. Let them sit for about 30 minutes to allow the flavors to meld and the syrup to form.

Make the Bisquick Biscuits:

  • Preheat the oven to 425°F (220°C). In a mixing bowl, combine 2 cups of Bisquick mix, 3 tablespoons of sugar, 1/3 cup of milk, and 3 tablespoons of melted butter. Stir until a soft dough forms.

Shape and Bake Biscuits:

  • Drop heaping tablespoons of the dough onto an ungreased baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until golden brown. Let them cool slightly.

Prepare the Whipped Cream:

  • In a chilled bowl, beat 1/2 cup of whipping cream until soft peaks form. Add the vanilla extract and powdered sugar, and continue to beat until stiff peaks form.

Assemble the Shortcakes:

  • Split the warm biscuits in half. Spoon the strawberry mixture onto the bottom half, then add a dollop of whipped cream. Place the top half of the biscuit on top and serve immediately.
