Ingredients
  

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked quinoa (cooled completely)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp olive oil (plus more for cooking)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Cook the quinoa according to package directions and let it cool. Drain and rinse the black beans very well. Finely chop the onion and garlic.
  • In a large bowl, mash the black beans until mostly mashed with some texture. Add quinoa, breadcrumbs, onion, garlic, olive oil, and spices. Mix gently until combined, without overmixing.
  • Divide mixture into 4 equal portions and shape into patties. Heat oil in a skillet over medium-high heat. Cook patties 5–7 minutes per side, until golden brown and crispy.
  • Serve on buns with your favorite toppings such as lettuce, tomato, onion, or sauces. Pair with sweet potato fries or salad.

Notes

Drain and rinse the beans thoroughly to avoid mushy patties. Be sure to let the quinoa cool completely before mixing. For a healthier option, bake instead of frying. Customize with extra vegetables, herbs, or spices. Can be frozen raw or cooked for easy future meals.
