Ingredients
  

Salad ingredients

  • 5 cups arugula
  • 1 cup blackberries
  • ¾ cup blueberries
  • 1 medium avocado, diced Use ripe avocados for a creamy texture.
  • cups cucumber, thinly sliced
  • cup feta cheese Use vegan feta for a dairy-free option.
  • cup toasted hazelnuts, chopped Toast hazelnuts briefly to enhance their flavor.

Vinaigrette ingredients

  • cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon maple syrup Or other liquid sweetener like agave or honey.
  • 2 tablespoons finely chopped fresh mint
  • ¾ teaspoon salt
  • Freshly cracked black pepper, to taste

Instructions
 

Preparation

  • In a small bowl, whisk together all the vinaigrette ingredients until well combined. Adjust seasoning to taste.
  • In a large bowl, combine the arugula, blackberries, blueberries, cucumber, avocado, feta cheese, and toasted hazelnuts.
  • Drizzle the lime mint vinaigrette over the salad and toss gently to combine. Serve immediately.

Notes

This salad can be served on its own or alongside grilled chicken or fish. It can also be a fantastic side dish for a summer barbecue. Store any leftovers in an airtight container in the fridge for up to one day. Make the vinaigrette a few hours ahead to let the flavors meld.
