Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling

  • 8 oz cream cheese, softened Allow to soften at room temperature for easier mixing.
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For topping

  • 1 cup fresh blackberries Feel free to swap out for raspberries or blueberries.
  • 1/2 cup chocolate chips Use quality chips for a richer taste.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking pan.
  • In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of the pan to form the crust.
  • In another bowl, beat the cream cheese until smooth. Mix in 1/2 cup sugar, eggs, and vanilla until well combined.
  • Pour the cream cheese mixture over the crust and spread evenly.
  • Scatter blackberries and chocolate chips on top.

Baking

  • Bake for 25-30 minutes or until set.
  • Let cool, cut into squares, and serve.

Notes

These brownies are best enjoyed fresh from the pan. You can serve with vanilla ice cream or whipped cream. Store in an airtight container in the refrigerator for 3-5 days; these can also be frozen for up to 2 months.
