Blackberry Cinnamon Rolls

Ingredients
  

For the Blackberry Filling

  • 3 1/2 cups blackberries, (fresh or frozen)
  • ½ cup granulated sugar
  • 2 1/2 tablespoons cornstarch
  • teaspoon salt
  • ¼ cup warm water may be adjusted to ensure proper yeast activation

For the Dough

  • 2 ¼ teaspoons active dry yeast (one 1/4-ounce packet)
  • 1 teaspoon granulated sugar for activating the yeast
  • ¼ cup instant vanilla pudding mix
  • 1 cup milk, (warmed in microwave for 30-40 seconds)
  • cup unsalted butter, (melted)
  • 1 tablespoon Greek yogurt
  • ½ teaspoon salt
  • 3-3 ¼ cups all-purpose flour amount may vary depending on humidity

For the Cinnamon Filling

  • 5 tablespoons salted butter, (softened)
  • 2/3 cup brown sugar
  • 2 ½ teaspoons cinnamon

For the Frosting

  • 5 ounces cream cheese softened
  • 5 tablespoons unsalted butter, (softened)
  • 1 tablespoon corn syrup
  • 2 teaspoons vanilla
  • 1/8 teaspoon salt
  • 2 cups powdered sugar
  • ¼ cup blackberry filling, (reserved from filling)

Instructions
 

Make the Blackberry Filling

  • In a medium saucepan, combine blackberries, granulated sugar, cornstarch, and salt.
  • Cook over medium heat until bubbling and thickened. Set aside to cool.

Make the Dough

  • In a small bowl, mix warm water, yeast, and sugar. Let it sit until foamy.
  • In a large bowl, combine pudding mix, milk, melted butter, Greek yogurt, egg, and salt. Stir in the yeast mixture.
  • Gradually add flour until a dough forms. Knead until smooth.

Baking

  • If Baking Immediately: Roll out the dough on a floured surface into a rectangle. Spread the blackberry filling on top.
  • Roll it tightly and cut into slices for the rolls. Arrange in a greased baking dish.
  • Or If You Want to Bake the Rolls the Next Day: Cover the rolled dough and refrigerate overnight. Allow the rolls to come to room temperature before baking.
  • Preheat your oven to 350°F (175°C).
  • Bake for 25 to 30 minutes or until golden brown.

Make the Frosting

  • Beat together cream cheese, softened butter, corn syrup, vanilla, salt, and powdered sugar until creamy.
  • Drizzle blackberry filling over the rolls and top with the frosting.

Notes

These cinnamon rolls are best served warm. Pair them with a hot cup of coffee or tea. Optionally, add fresh fruit or a smear of extra cream cheese frosting on top for a special touch. Store leftovers in an airtight container in the fridge for up to three days.
