  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons blackening seasoning
  • 8 ounces egg noodles
  • 1 cup sour cream
  • 1 cup beef or chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions
 

Preparation

  • Cook egg noodles according to package instructions; drain and set aside.
  • In a bowl, toss shrimp with blackening seasoning until well coated.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add shrimp to the skillet and cook for 2-3 minutes on each side until fully cooked and blackened. Remove shrimp and set aside.
  • In the same skillet, add onion and garlic, cooking until softened.
  • Stir in broth and bring to a simmer.
  • Reduce heat and mix in sour cream until smooth.
  • Add cooked egg noodles and shrimp back into the skillet, tossing to combine.
  • Season with salt and pepper.
  • Serve hot, garnished with chopped parsley.

Notes

For the best flavor, adjust the amount of blackening seasoning to taste. This dish is wonderful with a splash of lemon juice added in. To store leftovers, keep in an airtight container in the fridge for up to 3 days or freeze for longer storage.
