Blueberry Brie Jalapeño Poppers

Ingredients
  

  • 12 large jalape ño peppers, halved lengthwise and seeded
  • 8 ounces brie cheese, rind removed and sliced into 24 portions
  • 1/2 cup fresh blueberries
  • 2 tablespoons hone y
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 1 teaspoon fresh thyme leaves (optional)

Instructions
 

  • Preheat the oven to 400°F (204°C) and line a rimmed baking sheet with parchment paper.
  • Prepare the jalapeños by slicing them in half lengthwise and removing the seeds and membranes with a spoon.
  • Place the jalapeño halves on the prepared baking sheet, cut-side up.
  • Distribute the brie cheese portions evenly into the cavities of the jalapeño halves.
  • Press 2 to 3 fresh blueberries into the cheese of each pepper half.
  • Season the assembled poppers with salt and cracked black pepper.
  • Bake for 12 to 15 minutes, or until the jalapeños are tender-crisp and the brie is melted and slightly golden.
  • Remove from the oven and immediately drizzle with honey.
  • Garnish with fresh thyme leaves if desired and serve warm.
