  • 1 1/2 cups cottage cheese (full-fat or low-fat)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup milk (dairy or unsweetened non-dairy)
  • 3 large eggs
  • 1/4 cup granulated sugar or sweetener of choice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Zest of 1 lemon (optional)
  • 2 tablespoons cornstarch or all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh or frozen blueberries

Preparation

  • Preheat the oven to 350°F. Lightly grease an 8-inch square baking dish.
  • In a large bowl, whisk together cottage cheese, Greek yogurt, milk, eggs, sugar, vanilla extract, cinnamon, lemon zest (if using), cornstarch, and salt until smooth.
  • Gently fold fresh or frozen blueberries into the mixture.
  • Pour the mixture into the prepared baking dish and spread it evenly.

Baking

  • Bake for 35 to 40 minutes until the center is just set and the top is lightly golden.
  • Allow to cool for at least 10 minutes before slicing. Serve warm or chilled.

Notes

Store leftover portions in an airtight container in the fridge for up to four days. You can also freeze individual slices for later enjoyment.
