Dough Ingredients

  • 3 cups all-purpose flour Use bread flour for a chewier texture.
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast Ensure yeast is fresh.
  • 1/2 cup warm milk Milk should be warm but not hot.
  • 1/4 cup butter, softened
  • 2 large eggs

Filling Ingredients

  • 1 cup blueberries (fresh or frozen) Fresh blueberries are preferred.
  • Zest of 1 lemon
  • Juice of 1 lemon

Glaze Ingredients

  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice Use freshly squeezed lemon juice.

Instructions
 

Preparation

  • In a bowl, mix the flour, sugar, salt, and yeast.
  • In another bowl, whisk together warm milk, eggs, and softened butter.
  • Combine wet ingredients with dry ingredients and knead until smooth.
  • Let the dough rise in a warm place for about 1 hour or until doubled in size.
  • Roll out the dough on a floured surface into a rectangle.
  • Spread blueberries, lemon zest, and lemon juice over the rolled dough.
  • Roll the dough tightly and shape it into a spiral.
  • Place the dough in a greased loaf pan and let it rise again for about 30-45 minutes.

Baking

  • Preheat the oven to 350°F (175°C) and bake for 30-35 minutes.

Glazing

  • For the glaze, mix powdered sugar with lemon juice and drizzle it over the warm babka before serving.

Notes

Serve warm with a cup of tea or coffee. For added flavor, pair with cream cheese or a sprinkle of powdered sugar.
