Ingredients
  

  • 4 cups baby arugula
  • 2 medium peaches , sliced into wedges
  • 1 cup fresh blueberries
  • 1/2 cup feta cheese, crumbled
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon hone y
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons fresh mint leaves, chiffonade

Instructions
 

  • In a small mixing bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, salt, and pepper until emulsified.
  • In a large serving bowl, layer the baby arugula as a base.
  • Arrange the sliced peaches, fresh blueberries, and thinly sliced red onions over the greens.
  • Drizzle the prepared balsamic dressing evenly over the salad components.
  • Gently toss the ingredients to ensure light coating.
  • Garnish the salad with crumbled feta cheese and fresh mint chiffonade immediately before serving.
