Ingredients
  

For the Blueberry Compote

  • 1/2 cup blueberries Fresh or frozen blueberries work well.
  • 2 tbsp honey or maple syrup Adjust based on preference for sweetness.
  • 1 tsp lemon juice Freshly squeezed for best flavor.
  • 1/2 tsp vanilla extract Optional, adds flavor to yogurt.
  • 1 tsp cornstarch Optional, use to thicken the compote.

For the Yogurt Base

  • 1 cup Greek yogurt Can substitute with plant-based yogurt for dairy-free version.

Preparation of Blueberry Compote

  • In a small saucepan, combine blueberries, honey, and lemon juice over medium heat and simmer for 5 minutes until blueberries soften.
  • If using, dissolve cornstarch in a little water and stir into blueberry mixture to thicken.
  • Remove from heat and cool completely.

Preparation of Yogurt Bites

  • Mix Greek yogurt and vanilla extract in a bowl until smooth. Adjust sweetness with more honey or maple syrup if desired.
  • Spoon yogurt into silicone molds or mini muffin tins, filling about three-quarters full.
  • Add a spoonful of cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick to create a marbled effect.
  • Freeze molds for at least 3 hours until solid.
  • Remove frozen bites from molds and store in an airtight container in the freezer.
  • Let sit for 2–3 minutes before eating for best texture.

Notes

These yogurt bites can be served on their own, as part of a snack platter with fresh fruit or granola. Adjust sweetness to taste. Store in the freezer for up to a month.
